A whiter shade of Old Pale?
A wide palette of colours: from the totally
transparent « eau de vie » that you will never find in any shop, to the amber
or even mahogany hue of old cognacs

The colour of a wine can give you many indications about its origins, ageing etc.. It is not the case with the colour of a Cognac.
Of course, the colour is an indicator of ageing, but the producers are allowed to adjust the intensity of colour by adding caramel (a type of caramel which gives only colour, and absolutely no flavour).
So, with Cognacs, you have to be curious...
Many questions arise:
What is the influence of wood?
How
can you explain the undertones?
By the way, why do they add caramel?
A little visit to Cognac will help you to find the answers...
